Russian Potato Salad (Kartophelny Salat Po-Russki)

Ingredients:


2 pounds new potatoes

2 tablespoons finely chopped spring onions

3 tablespoons finely chopped fresh dill

6 tablespoons finely chopped sweet-sour gherkin

6 medium radishes -- thinly sliced

1 bunch fresh dill sprigs

---dressing---

3/4 cup mayonnaise

1/2 teaspoon worcestershire sauce

1 1/2 tablespoons ketchup

2 tablespoons dry white wine

1 teaspoon horseradish sauce
 

Preparation / Directions:


Put the potatoes in a large saucepan of water and bring to the boil. Cover, lower the heat and simmer for about 20 - 25 minutes, or until the potatoes are done. Drain and when cool, cut into 1/4" slices. In a small bowl, whisk together the ingredients for the dressing. In a large bowl, assemble the potatoes, onion, dill, gherkin and radishes. Pour the dressing over and toss gently to combine. Transfer the salad to a serving bowl and chill for 30 minutes before serving garnished with the dill sprigs.
